So I finally did it. I bought everything I needed, and started a brew. Primary fermentation began 24-Oct. Transferred it to a one gallon carboy on Saturday. Was rather convinced it really wasn’t “working” because the yeast I chose is apparently a “low foam” one. Thus the primary fermentation seemed very quiet.
Got up on Samhain morning though, and found that the carboy was very happily bubbling and gurgling. So I have a Samhain – Yule mead brewing on the kitchen bar. I’m almost giddy. It looks like it will be a light golden color, and it is intended to be a sweet mead. High honey content. Orange Blossom honey, Red Star Côte des Blancs yeast.
Plan to bottle it in time for Yule. Happy New Year, btw.
